Garlic infused oil at home, and how to keep it safe

Garlic infused oil is olive oil that has spent a few hours with garlic at a gentle heat. It tastes of garlic without the bite, and a spoonful turns plain pasta into dinner.

It also comes with one rule, so here it is first. Homemade garlic infused oil goes in the fridge and gets used within 4 days, or it goes in the freezer. Never on the counter. Garlic in oil at room temperature is a botulism risk.

Make it in small batches, keep it cold, and it is one of the most useful things in your fridge.

Why garlic infused oil belongs in the fridge

Garlic grows in soil. Oregon State University Extension notes that low-acid foods like garlic can carry Clostridium botulinum, a bacterium found in soil, water and air.

Cover the garlic in oil and you shut out the oxygen. That is the condition those bacteria need. Washington State University Extension puts the risk highest for moist, low-acid foods in oil kept at room temperature. Garlic in oil on a warm kitchen shelf is that exact case.

The bottles of garlic oil in a supermarket are a different product. OSU explains that commercial garlic in oil is acidified so it can sit on a shelf. WSU adds that there is no research-tested method for doing the same with garlic in oil at home.

So the fridge is not optional. Three facts to keep:

  • 4 days in the fridge. OSU's rule for homemade garlic in oil, fresh or dried.
  • The freezer for anything longer.
  • Heat does not change the rule. Cooking the garlic in the oil, however long, does not make it safe to keep at room temperature.

Fresh, dried or roasted garlic

Fresh garlic gives the cleanest, sweetest oil. Peel the cloves and slice them or crush them lightly. Sliced garlic gives more flavour in less time.

Dried garlic (flakes or granules) is handy, but OSU applies the same fridge and 4 day rule. Dried is not a loophole.

Roasted garlic, or garlic confit, is garlic cooked slowly in the oil until soft. It spreads on toast and follows the same rule: fridge, 4 days, or freeze.

What you need

  • Peeled garlic. Up to 30 g for a 350 ml batch.
  • 300 to 330 ml of oil. Olive oil for flavour, sunflower oil for a neutral base.
  • A fine sieve or a filter, a clean bottle or jar, tape and a pen.
  • A thermometer if you use the hob.

The ratio comes from the NOIDS Herb Lab: up to 30 g in a 350 ml glass. It works the same in a pan.

How to make garlic infused oil on the hob

  1. Put the garlic and the oil in a cold, heavy pan.
  2. Heat it slowly to around 100 °C. Use the smallest burner and the lowest setting.
  3. Watch the colour. The garlic should go from white to pale gold. Brown garlic is bitter garlic.
  4. Hold it there for 2 to 3 hours. Stir now and then.
  5. Let it cool until you can touch the pan.
  6. Strain into a clean bottle.
  7. Write two dates on the tape: the day you made it and the day four days later. Fridge.

The failure mode is heat. Too hot and the garlic fries, browns and turns the whole batch bitter. If you see small, fast bubbles around the slices, take the pan off the heat and lower the flame.

How to make garlic infused oil in the NOIDS Herb Lab

The NOIDS Herb Lab holds 100 °C within 1 °C for the whole run. That is the part a hob gets wrong.

  1. Put the garlic in the glass, below the MAX mark, and add the oil.
  2. Fit the sleeve and the lid. Press the glass down into the base until it touches the probes.
  3. Turn the dial to Oil. It beeps after 3 seconds and starts heating.
  4. Leave it. The programme runs 120 to 180 minutes.
  5. When it beeps, lift the glass out, fit the filter set and strain.
  6. Cool, bottle, date. Fridge.

No pan to watch, no garlic burnt while you answered the door. The glass and the filter set go in the dishwasher.

How to keep garlic infused oil

WhereHow longNotes
Counter or cupboardNeverBotulism risk at room temperature
FridgeUp to 4 daysLabel the day made and four days later
FreezerFor longer storageFreeze in an ice cube tray, then bag the cubes

The ice cube tray is the trick that makes a batch last. Pour the cooled oil into the tray, freeze it, then tip the cubes into a labelled bag. One cube is enough for a pan of greens or a bowl of pasta. Take out what you need and put the bag straight back.

Olive oil thickens and clouds in the fridge. That is the oil, not the garlic. It clears as it warms up.

A batch you forgot and found on day six goes in the bin, not in the pan. Four days is the limit, not a guideline.

How much to make

Make what you will use in four days. For most kitchens that is one 350 ml batch, or half of it in the fridge and half in the freezer from the start.

A litre of garlic oil looks generous. You cannot use a litre in four days.

What to cook with garlic infused oil

  • Spaghetti aglio e olio. Pasta, garlic oil, chilli flakes, parsley, a splash of the pasta water. Done in the time the pasta takes.
  • Toast. Brush it on sourdough and grill it. Rub a tomato half over the top.
  • Greens. Spinach, chard or broccoli in a hot pan with a cube of frozen garlic oil.
  • Roast vegetables. Toss them in it before they go in the oven.
  • Fried eggs. Fry them in a spoonful and spoon the oil over the yolks.
  • Dressing. Three parts garlic oil, one part lemon juice, salt. Shake it in a jar.
  • Mash. A spoonful stirred into mashed potatoes in place of some of the butter.

The mistakes that matter

Leaving it out. The one that is not about flavour. Fridge or freezer, always.

Topping up an old batch. New oil on old garlic does not restart the clock. The clock started when the first batch was made.

Brown garlic. Too hot, too bitter. Stay at 100 °C.

Cloves left in a pretty bottle. It looks good on a shelf and breaks every rule above.

No date on the bottle. By day three, nobody remembers which day was day one.

The rest of the kit

The NOIDS Herb Lab makes herb oils, herb butter and alcohol tinctures such as vanilla extract. The condenser is only used for tinctures, so if yours is worn or lost, the replacement condenser is sold on its own. Everything else for herb oils and butters at home is on the herbal extraction shelf.

FAQ

How long does homemade garlic infused oil last?

Up to 4 days in the fridge. Freeze it for anything longer. Never keep it at room temperature.

Can I keep garlic infused oil at room temperature?

No. Homemade garlic in oil at room temperature is a botulism risk. Shop-bought garlic oil is acidified to make it shelf-stable, and there is no tested way to do that at home.

Does cooking the garlic make the oil safe to store?

No. The infusion heat does not change the storage rule. Fridge for up to 4 days, or freeze.

Can I use dried garlic instead?

Yes. The same rule applies: fridge and use within 4 days, or freeze.

Why did my garlic oil turn bitter?

The garlic browned. Keep the heat around 100 °C and take the pan off if you see fast bubbles.
